Launching the first of our certified organic Pinot Noir sourced from our winery vineyard. Introducing Tom McCarthy as lead winemaker. His direction is a more careful fermentation regime; every berry left whole to gradually ooze sugar and tannin into the fermenting vat. Soft power. Less air, less sulphur; glossy black wine that tastes like kissing in the forest.
LOOKS LIKE... Dense vermillion with dark black shadows, the warmth of velvet
SMELLS LIKE... Complex pinot noir from the forest floor; earth, fallen leaves, mushroom lifted with blackberry raspberry notes. The well-loved oak hints in the background

CELLAR UNTIL... Juicy enough to drink as a young wine but with the power to cellar for 5 years
